Though the nutrition world has become polarizing, the shared ground tends to be “eat more veggies.”
If you want to incorporate more vegetables in your day, start at the beginning of the day with these veggie-packed breakfast ideas.
As I know many of you have egg allergies or avoid eggs, I’ve included egg-free options and noted them below.
1. Spaghetti Squash Porridge
Egg free. Did you know you can make grain-free breakfast porridge with spaghetti squash? It’s comforting, and hearty. The addition of collagen makes it a protein-rich breakfast without eggs. Recipe here.
2. Sausage Buddha Bowls
Egg free. Feel free to customize this egg-free breakfast with seasonal ingredients, such as your choice of sautéed greens and your preferred sausage. The kumquats are beautiful but not necessary, you can use instead a squeeze of lemon or lime juice for zest. Recipe here.
3. Cilantro Chicken Veggie Casserole
Casseroles are a sadly-ignored breakfast option. I often double a casserole when making it for dinner, so I have plenty of leftovers for breakfast. This is one of those recipes that tastes even better the second day, after the flavors meld. Recipe here.
4. Green Breakfast Soup
Egg free. Soup is a breakfast food if you want it to be! This recipe features spring veggies including zucchini and asparagus, and is topped with a lemon pesto. Recipe here.
5. Brussels Sprouts Hash
Egg Free. Leeks, Brussels sprouts, and parsnips make the base of this hearty hash. It pairs well with ground sausage of any flavor. Feel free to top with over-easy eggs if you desire. Recipe here.
6. Eggplant French Toast
Yes, it’s one of the stranger recipes on my site. If you’re adventurous enough to try it, you’ll be pleasantly surprised! Eggplant takes the place of bread in this Paleo French Toast. Recipe here.
7. Bacon Zucchini Fritters
A healthier take on a pancake breakfast. Recipe here.
8. Buffalo Chicken Casserole with Spaghetti Squash
This recipe features spaghetti squash as a base, with ground chicken and a dash of hot sauce. Recipe here.
9. Ratatouille with Poached Eggs
Packed with tomatoes, eggplant, and summer squash, this flavorful ratatouille gets a protein-boost topped with poached eggs. Recipe here.
10. Squash with Sausage Gravy
Egg free. I’m no Southern gal, so I wasn’t familiar with sausage gravy growing up. I created this version after going grain-free, and realized what I had been missing! Recipe here.
11. Butternut and Chorizo Baked Eggs
Perfect for feeding a crowd, this egg bake features spicy chorizo and sweet butternut squash. Recipe here.
12. Egg + Veggie Muffins
Baked eggs and veggies in muffin-size cuteness. Recipe here.
13. Veggie and Salmon Paleo Casserole
Bring on the breakfast casseroles! This is another recipe I’ll double, so I have breakfast leftovers after serving it for dinner. It features broccoli, mushrooms, and canned salmon in a creamy sauce. Recipe here.
14. Cauliflower Tater Tots
Hands-down, one of my favorite recipes on my site. You can also bake these instead of pan-frying. I use a mini ice cream scoop to divide the batter onto parchment-lined baking sheets, and I bake at 415 degrees for 15 minutes, flipping halfway through. You can serve with the avocado sauce recipe provided, and ketchup is also tasty. Recipe here.
15. Butternut Squash Porridge
Egg free. Simple and delicious, baked butternut squash is topped with coconut milk and your choice of berries. You can add dried fruit and nuts, as well. Recipe here.
