Versatile Butternut Squash
Butternut squash just may claim the title of “Lauren’s favorite ingredient.” I think the love affair really began when I first made my butternut pizza crusts (#1 on this list for a good reason). Butternut squash boasts a full flavor and wide versatility, especially for grain-free meals.
Many of these recipes call for cooked and mashed/puréed butternut squash. A nearly hands-free preparation is to cook the butternut squash in a crockpot.

it’s such a complete “brain save” for me. I literally do nothing. The texture ends up being a tad different, but not enough that my family has ever noticed. ? The kids love having it cooked in baggies too because I will keep some in the fridge and it makes them much more apt to cook up something on their own. ?
I love gloomy days but I tend to be way less productive because I want to sink into watch a movie under covers all day.
Just discovered your blog and am slowly working my way through bookmarking all the recipes I want to try! This one is at the top of the list and I was even lucky enough to find the brand of ramen noodles you linked at my local Asian grocery market! A question on the soy milk, can it be subbed for cows milk?
This is truly an exotic sauce and recipe, for us Greeks:) It sounds very appetizing and interesting! How do you use this in enchilladas Michelle? Do you spread this on top before baking them? Sorry for the silly question, we don’t know much about Mexican cuisine:)

Looks delicious! I wanted to stay away from cinnamon because I find that butternut squash is so often paired with it and I want something purely savory.
Absolutely adore cheese. Any kind is ok with me. Would love to win the package.
