Using frozen broccoli florets takes virtually all the preparation time out of roasted broccoli, without sacrificing texture or flavor. Curry Powder or Old Bay Seasoning adds a slightly spicy, earthy kick to these addictive veggies. This is one of my favorite go-to veggie dishes because it is quick and easy.
Spiced Roasted Broccoli (From the Freezer!)
Ingredients
- 1 bag frozen broccoli florets
- 1 tsp. Old Bay Seasoning or curry powder
- ½ tsp. sea salt
- 2-3 Tbs. melted coconut oil
Instructions
- Preheat the oven to 425 degrees. Line two baking sheets with parchment paper. Divide the broccoli between the two sheets and toss with the Old Bay, salt, and olive oil. Roast for 15 minutes, then flip the florets over. Roast for anther 15 minutes, until golden brown in spots and tender.
- Makes about 1½ cups, or 3-4 servings.
Thanks for sharing. I recently made my own Old Bay. We should stay in touch :).
Homemade Old Bay–what a great idea! And yes, let’s stay in touch!
Hi Lauren,
I love your posts. Your love of writing really shines through! Are you majoring in psych or just taking a class?
I can relate to this story in so many ways. Food was just food, something to make me feel…not hungry. Wow, how things are so very different. Like you, some food elicits fear (fear of the pain it might cause) or I see food with a little cape on it (like a little superhero – I’m super good for you, watch I’ll make you feel awesome). 🙂 Very dichotomous.
I really love broccoli. I don’t purchase it frozen, but I love your tip here (just in case). And I will definitely check out that Old Bay seasoning.
Have a great rest of your week. 🙂
Hey Amber! I am so glad you enjoy my little bits of writing here! I really do love writing. I am going to mayor in psych and also get a certificate in holistic nutrition (I’m looking at different online holistic nutrition programs right now). I laughed when I imagined your “superhero” foods–but that is such a great way to put it! I guess I see some of my foods as superheroes, like my fermented veggies and raw butter. Hope you enjoy the rest of your week, too!
Such a nice recipe, but we can’t get Old Bay seasoning here, I’ll look it up! We use frozen veggies from time to time, the nutrients are still intact if they’re frozen properly and TBH it does make life easier.
I really look forward to your posts!
Be well!
Hi Vicky! If you can’t get your hands on Old Bay, curry powder is delicious instead! That’s how I made these tonight. I usually use fresh veggies too, but it is nice to have a frozen bag for those times when I cannot get to the grocery store for a while.
i can so relate — the nostalgic memories of seeing food as food. Ice cream sandwiches from the snack shack at the pool were my “pirate’s booty” 🙂 Wonderful, wonderful post Lauren! And ps — i love old bay!! 🙂 Have a great night!
You’re right! Easy and delish!! Going to give it a try! Please don’t forget to like us on Facebook Thank you for linking to Foodie Friday!
I’ve made roasted broccoli, but never with any seasonings…will have to try Old Bay and also Curry powder. Good to know frozen broccoli works well, it is nice to have some back up recipes for frozen veggies.
Fun post, glad you found some simple pleasure with this food. I agree that they are delicious enough to qualify as a treat!
Can’t wait to read more great stories and recipes:)
I love this recipe idea! Old Bay is one of our favorites! Thanks for sharing. I’ll be pinning this one!
This recipe is so good! Roasted broccoli & Old Bay. Who knew? So easy! I’ll never steam broccoli again! Delicious!
thank you…i lucked into two cases of organic broccoli for twenty bucks last weekend so my freezer is well stocked with florets. We normally just eat it raw or sometimes steam fresh so good to know a simple way to prepare it from a frozen state…would love the home-made Old Bay recipe.
Great recipes. But I’m confused. I thought you weren’t supposed to cook with olive oil.
I agree Dara. It releases free radicals into your body when heated to high temps! I use coconut oil.
