Egg free coconut flour cookies! I want to sing it from the rooftops! But wait… it gets even better: these golden brown, bite-sized morsels require only three ingredients and come together in 5 minutes flat.
Egg Free Coconut Flour Cookies

Serves: 5 small cookies
Ingredients
- 3 Tablespoons Coconut Flour
- 2 Tablespoons Cold Butter
- 1 Tablespoon Raw Honey
- Pinch of salt
Instructions
- Preheat the oven to 365 degrees and line a baking sheet with parchment paper.
- Pulse all ingredients together in a food processor or blend with a pastry blender.
- The dough will be soft and slightly sticky.
- Divide into 8 small balls and flatten slightly on the baking sheet.
- Bake until the edges are light golden, about 9 minutes.
- These over bake quickly, so keep an eye on them.
- Let the cookies cool completely before removing from the baking sheet or they will crumble.

I tried them twice, each time the cookies took forever to “bake” and still that stuff was inedible. It remained sticky and didn’t form a cookie at all. I had to throw them away. However I would really love to find out what the problem is. I did it exactly according to the recipe and yet I ended up with no result 🙁 Any help?
To those who have had problems with the cookies holding together- I let the cookies cool and then put them in the freezer! They hold together pretty good. Sometimes I add Navitas raw cacao powder to the mix, yum. They taste really great almost frozen. Sometimes I add a little cinnamon to them too:)
I have used coconut oil without any problems too.
