Coconut Cherry Paleo Granola Bars
Serves: 12-14 bars
Traditional granola bar recipes often rely on copious amounts of sweetener and oats. This grain-free recipe uses coconut as a base and is sweetened with a touch of honey and dried fruit.
  1. Preheat oven to 375 degrees Fahrenheit and grease a 9 inch by 11 inch glass baking dish with a bit of coconut oil.
  2. In a large mixing bowl, combine the banana chips, cherries, coconut, seeds, and salt.
  3. In a small bowl, whisk together the coconut oil, eggs whites, egg, vanilla, and honey.
  4. Pour the wet ingredients into the dry and mix well. Press into the prepared baking dish.
  5. Bake for 20-23 minutes, or until golden brown. Allow to cool and cut into bars.
  6. Melt the chocolate and coconut oil over low heat and stir. Drizzle over bars and let harden.
  7. Enjoy!
