Matcha Collagen Energy Bites
Author:
Serves: 10-12 bites

These energy bites provide concentrated nutrients from antioxidants from matcha and bee pollen. Collagen provides protein and healthy fats in the coconut butter keep you satiated.
Ingredients
Instructions
  1. The coconut butter should be soft enough to stir. Like coconut oil, the consistency of coconut butter varies with the room temperature. If it is solid, I recommend placing the jar in a pan of hot water, allowing the water to come halfway up the sides of the jar. Sit for 5 minutes to soften, then stir until creamy.
  2. Stir together the coconut butter, raw honey, coconut oil, matcha, salt, and collagen. Set aside.
  3. In a coffee or spice grinder, blitz together the pistachios and bee pollen until you have a crumbly mixture. Alternatively, finely chop the pistachios and stir together with the bee pollen.
  4. Form the filling into balls, using about a tablespoon of filling. Coat in the pistachio/pollen mixture. Chill on a parchment-lined baking sheet until firm -- a couple of hours.
  5. Store the energy bites in the fridge of freezer, because they will soften at room temperature.
Notes
Do you have leftover any pistachio and pollen mixture leftover? Save it for smoothies or as an ice cream topping! My current favorite dessert is coconut milk ice cream sprinkled with chopped pistachios, bee pollen, and some flake salt.
