Paleo Sesame Ginger Dressing

Serves: About ¾ cup
- ½ cup healthy mayonnaise, recommended brand here
- ¼ cup canned coconut milk, recommended brand here
- 2 Tbs. olive oil, recommended brand here
- 2 tsp. rice vinegar or apple cider vinegar
- 1½ tsp. toasted sesame oil, available here
- 1 green onion, very finely chopped
- ½ clove garlic, put through a garlic press or grated on a microplane grater
- 1 Tbs. coconut aminos, available here
- ½ inch piece peeled ginger, very finely minced or grated on a microplane
- Salt, if desired
- Optional: gomasio, available here
- Whisk together all ingredients, or use an immersion blender to make quick work of the mixing.
- If desired, top your salad with gomasio, a nutrient-dense blend of sesame seeds and sea vegetables.
- The dressing keeps for a week in the fridge.
